not quite, a i7 rig with a single 5870 draws about 250W.
A 5870 is rated at 188W max (less when paired), so it might just be out of a 750W corsairs reach, but triple Xfire is well achievable.

Im kind of in the middle of this discussion
1000W is not required for a 2 card SLI/Xfire, no matter what it is (excluding maybe 2 295 GTX but that essentially is 4 graphic cards)
750W is more than enough for basically any 2 card setup.
However, if you are intending to use three or four cards then there might be a good reason to consider a 850-1k PSU.
An i7 with a 5870 can use more than 250w depending on how the system is stressed and overclocked. But I still agree that the 750hx can probably power 3 cards simply because in real life situations, the third card requires less power than the first two when gaming. But if you are going to 3-4 card level, you will probably draw want an 850W PSU+ anyways because running PSUs at constant 90-100% load is never a good thing

I ended up going with a 850w (nonmodular) corsair. Does that sound like a better choice?-- saves quite a bit of money.
Now I need to find a 5870! Can't find one available..!!!

850W Corsair is plenty enough.
5870s availability is a bit low atm as the demand is really high
