Default Mac Pro In My Future... Q!

My current desktop has been a trooper for the past few years, but sadly it's becoming a bit aged. I've practically maxed it out, and even though it can hold it's own in doing my day-to-day software development gig and rendering small projects I'll have to put her down .

I have an MBP now, and since I've had it I've been looking at Apple machine's in a new light. I'm prepping myself to getting a Mac-style desktop, eying a Mac Pro. I've got a few questions about it:
  1. Am I free to put in whatever graphics card I choose? Or are there limitations? I'm thinking of going for one of the Radeon cards that are a bit more powerful than the standard 2600 that Apple put's in them. I'm not planning on going for the latest and greatest one, just one that is fresher than the 2600.
  2. How loud does your MP get? I plan on initially starting out with the standard HD, and so far I've heard that it only gets loud when multiple HD's are installed. Whats your take?
  3. Does anyone run multiple virtual machines on their MP's using VMWare Fusion? I plan to run Vista + 2 copies of XP Pro virtually.

There are driver limitations to what graphics card you can put in. I'm sure it supports the 8800, but I don't really know what else. There's also a Radeon card it supports.

I think the most recent ATI card supported for macs is the 3870.
